Use the ridge as your spine. The Lake Wales Ridge is the ancient sand spine running down the middle of the peninsula, and it is the reason this part of Florida has elevation, citrus, and cooler evening air. Lake Wales sits on top of it, and the two landmarks most people come for — Bok Tower Gardens on Iron Mountain and the gravity-hill illusion at Spook Hill — are minutes apart. If you start your Saturday there, you get the gardens in the cool part of the morning, Spook Hill on the way back into town, and lunch downtown without ever getting on the highway.
Save Winter Haven for the evening. Winter Haven is the chain-of-lakes city about twenty minutes north, and it is where the county keeps most of its bars, breweries, and weeknight stages. Most of what makes a Polk County weekend memorable is not a permanent attraction; it is a one-weekend thing — a market, a festival, a library talk, a recurring open mic. Check the events calendar for the dates you are actually in town and build around whatever is scheduled, rather than assuming the guidebook stops will fill two full days. They will not, and they are not supposed to.
A workable two-day shape
Saturday morning on the ridge: gardens, Spook Hill, downtown Lake Wales for lunch and the murals. Saturday afternoon: one nearby town — Bartow, Dundee, or Frostproof — depending on which direction you want to see citrus country from. Saturday evening: Winter Haven for dinner and live music. Sunday: whichever outdoor thing the weather is cooperating with, then home. That order works in either direction and it keeps your driving to short hops instead of long ones.
